TWICE BAKED APPLE WITH CINNAMON VANILLA YOGURT SAUCE


Serves 4
1 apple per serving
3 points

4 Apples, fresh, small
1 cup Applesauce, unsweetened
1/4 teaspoon Cinnamon, ground
1 tablesppon Splenda® brown sugar
1/4 cup Water
2 cups Weight Watchers® Vanilla Nonfat Yogurt
1/4 teaspoon Cinnamon, ground
4 teaspoons Pecan or walnuts, toasted and chopped

1. Core the apple, leaving the bottom intact so that the apple can be filled.

2. Place apples upright in a small glass microwave safe baking dish.

3. Stir together applesauce, cinnamon and Splenda® brown sugar. Spoon evenly into the four apples.

4. Pour the water into the bottom of baking dish. Cover glass dish and place in microwave.

5. Cook at half power (medium) for 12-15 minutes until the apples are soft but hold their shape. Remove from the microwave and allow to cool to desired temperature.

6. Stir Weight Watchers ® Vanilla Nonfat Yogurt and spoon over each apple. Garnish with a sprinkle of cinnamon and toasted nuts.
