With Venizon, I will go with a Cabernet Franc. The last time I had Wild Boar, I paired it with a Lewis Cellars Chardonnay. Pheasant or other wild bird try a Rousanne or a Pinot Noir.

Last night we enjoyed a bottle of this fantastic California red. I paired this wine with Oysters and Prime Rib, but this wine is very drinkable and honestly would be complimentary to almost any dish.

In winemaking there is a secondary fermentation process called Malolactic Fermentation which does some good things to the wine for your palate. What do you know about Malolactic Fermentation (Malo, MF or MLF)? What good does it do? Does it also cause the headaches as some claim when you drink red wine?
