Show your mum how much you care and make her brunch this weekend. Middle Eastern Style One-Pot Eggs with Sausage...my latest recipe for Good Family Food
Treat your mum to this simple, tasty and healthy brunch dish! She’ll be so impressed with this twist on the classic Middle Eastern Shakshuka. Serve with warm f...latbreads, crusty bread or toasted sourdough to mop up all those delicious flavours from the sauce. This is sure to be a new family favourite!
Middle Eastern Style One-Pot Eggs with Sausage
Prep time: 10 minutes
Cooking time: 20 minutes
1 tablespoon olive oil
1 medium onion, sliced
1 large clove garlic, crushed
1/2 teaspoon smoked paprika
Pinch salt & pepper
400g tin chopped tomatoes
2 sweet red pointed peppers, sliced into rings
4 thick Butchers Pork or Cumberland sausages
100g sliced kale
4 large free range eggs
50g feta cheese, crumbled
50g Greek yoghurt to top (optional)
1. Heat a medium lidded skillet or saute pan on the stove with a tablespoon of olive oil. Brown the sausages all over then remove them from the pan, and place to one side for now.
2. Add the sliced onions to the pan and fry gently until softened, for around 5 minutes.
3. Add the crushed garlic, smoked paprika, sliced red peppers and tinned tomatoes plus some salt and pepper and cook gently for around 10 minutes with the lid on the pan.
4. Meanwhile slice the browned sausages into two or three pieces each and return to the pan with the kale once the sauce has simmered for 10 minutes or so. Cook gently for a couple of minutes until the kale has wilted.
5. Remove the lid and create a space for each of the eggs using the back of a wooden spoon. Now carefully break each of the eggs into the spaces created in the pan, ideally the eggs should be touching the bottom of the pan so they cook more quickly. Now return the lid to the pan and continue to cook at a low heat until the whites of the eggs have firmed up, but the yolks are still runny. If you prefer firmer yolks you can break them up slightly before serving and the heat from the pan will firm them up.
6. Remove the pan from the heat and crumble some feta on top, along with some flakes of sea salt and ground black pepper.
7. Serve immediately with some warmed flat breads or toasted sourdough bread, with little blobs of Greek yoghurt on top if you like.
These Haggis Neeps and Tattie Cakes make a delicious Burns Supper dish or an indulgent brunch. Each mouthful has all the flavours of haggis neeps and tatties, with a crisp panko breadcrumb topping. For a veggie option just replace the haggis with veggie haggis. This is a great way to use up any leftover haggis, neeps and tatties, if you have any that is, or make them specially as they’re so good! To make them that little bit more special why not try making a batch of homemade...

Calling all chef / foodie friends...I am going to be lead home economist in the Super Theatre at the Cake and Bake Show in London from 5th to 9th October and urgently need to find an assistant. Ideally someone with a bit of home ec experience, but could be a freelance chef (ideally with a good knowledge of pastry). Ideally with their own vehicle. Event will be held at ExCel London. Expenses covered (if not traveling too far). Hard work, but great fun. Please pass to anyone you think would fit the bill. Thank you!

Why not try something a little different for your next BBQ - Jamaican jerk pork with coconut rice and beans? Here's the latest Daniela's Kitchen recipe for Good Family Food
Jerk is the ultimate Jamaican BBQ dish, it’s spicy yet fruity and gives meat a tender and succulent flavour. We’ve used pork tenderloin as it’s lean and quick a...nd easy to cook but you could use any cut of pork including chops. The flavour of the pork will become spicier and more intense the longer you leave it to marinade. Ideally marinade overnight and serve with the classic rice and beans, or a summery salad and jacket potatoes . A really simple way to impress at your next BBQ. (Here's hoping the sun shines - but if not easily done in the oven!)
