Right-I Hello guys. Thank you so much for tuning in my name is David Kim. You are on the David Kemp for Congress, financial Freedom, Love and Justice. For all page I am running for Congress in California's 30 Fourth Congressional District, which covers downtown La Korea Town, Eagle Rock, Highland Park and other surrounding neighborhoods. we started a covid- 19 community MK BK series where we are spotlighting local family owned restaurants that have been impacted hard by covina. In quarantine as a lot of people or all people were not allowed to go ahead and dine out at restaurants. and so as a result, a lot of these restaurants have suffered and experience a hidden sales of at least 70 to 80 percent or more. And so it's to the point where a lot of restaurants have already closed down whether that be permanently or temporarily and so we just wanted to help those restaurants in our local community because they make up the lifeline of our communities and and just find out ways how we can. I've seen you a lot doing like broadcast and being proactive despite having the quarantine and whatnot, I mean just in a few. Is what have you been up to I mean I have been taking this time to also you know, try and push more of my creative endeavors as well, like writing scripts and things like that. That's something that you know as you said, like it's a passion of mine while also continuing to do like some of this YouTube video and keeping the gang engaged in trying to bring on more people who are you know advocates of universal basic income during this time, So it's basically how I'm spending this time. Now and I mean, I'm just like I'm just so glad that you you're running in my district like that's like it's it's incredible to say that like I'm a huge pro universal basic income and we have David Kim, who is who's gonna be Jimmy Gomez in November. It is so freaking good. so I'm very excited to eat this. yeah, so I have a different variation of your Kimchi. So for those who are watching Kimchi kimchi means it's the name of a Korean dish. It's a cabbage pickled cabbage Cheez soup so kimchi soup, but she has a pork rib kimchi soup and I have I think this is a mackerel kimchi soup, so there's different ways you can make just yes, let's do it. Yeah We're so that like hold on one second. if someone was like, I really shouldn't be watching. this is the rib hold on. let me take it out and it comes in a big that, but I had to put it in another Bowl. This is the this is the Red right here Oh, my gosh that looks so good in the Kimchi and I'm very excited to eat. We're so happy to have you on so this is your new. Chef KK toolbox How long have you guys been open? we opened on February twentieth So it's like a month before Colgate here, so we've been only been open a month and this happens so it was not even it's not even we have a month. Yeah actually, Oh God. oh my gosh so then before that you guys actually had dine-in right. Yes, we did yes okay and that was actually we were packed. So even on weekdays and I was like wow, this is so good and then this here and but we kept it open and I wasn't crying or complaining because I actually do the cooking so I didn't have to pay for or chef, but I feel so sorry for other restaurants owners who actually had to pay for the sheriffs and that's a lot of you know lumps of money and they like it's probably better to have a close down. so I just ask that I could cook and I'll keep my you know staff Minimal and stay open. So yeah. Yeah. Yeah. Well I mean since since you kinda started off with that now, I'm kind of curious. I mean we'll go ahead and dive into this amazing food and I'll give you guys a background of why I'm so excited because chef King has actually done Buddist establishments and cretan before and I've been to those restaurants and they're so good. So I'm like Super excited but chef like when you opened up and how many employees were on the staff and then now how many employees are there. When we initially opened the total of the kitchen, plus the out about 910 total, okay right now about 30 so and my wife is you know working a lot and I don't know it's but we have to survive in some way and actually after this incident happened a lot of the local supporters actually you know dive in and they were ordering a lot so we were up there not good as before, but I ain't complaining. You know cuz there's not out there that's having worst time and as you know, thank God that we could keep it open and not as we're still care taking it out and ordering and delivery stuff right. Yeah. I mean chef kt. Do you do you mind if we eat while we talk and it's of course, of course because the food is so good. So this like I guess this menu is very, I guess it's different from your other restaurants because the restaurant right before this season, it was it was like very Fusion. And like different kinds of mix of this and that, but this one is like more like Korean like Korea. Yeah. And I think most people like it when I cook traditional Korean, but some of the many is a little bit of twist, but it's pleasing a lot of elderly Koreans and they are picky. You know me and if I please them, then I have it done and they like it. so and that's the thing there's a lot of people, although a lot of people do love Fusion if you do the fusion wrong where you lose that career and authentic whatever that is Oh, yeah, I put my butt cheek. Yeah, you come out and straight on and say you know what this ain't no fusion. So it's kinda tricky. You know most people think you know, it's just putting the ingredients together. You know two different cultures into one that doesn't make it usually has to work together and I I've been kicked my butt by a reviewer a couple of times before, but I updated and they're happy. I feel good and so chef. that's what I love a kind of what I've seen before like when different people give different. I don't wanna say. That negative, but when they give you feedback, you actually listen to it and you're like Oh and then you get very creative with it. and then you see an update to the menu or something. and so yes I do and all of my viewers I take positive and negative compliments and complaints and I just do it. I think that's what the chef should do you know and I actually like negative review much better. I'm not saying I want em but I don't like it. I like it because then I can really think about what I had done wrong and why is this review complaining about this and if the review? Make sense I just did and my way of my staff or with my cooking or my menu or even you know the name of the food or whatever you know. Yeah, I mean chef can do this item right here. So this is Kimchi Kimchi, which is Pike mackerel with Kimchi that my mom made like so much. And so as I'm eating and I'm like, oh crap. I'm thinking about my right now, but I mean I know is this like home. Style of cooking that you guys traditionally ate and now you're just sharing it with the public. Yes, yes, it's something that I grew up eating also a lot of people these days, they don't wanna eat meat. That's why I created this and it's something that we always cook at home, but actually it's getting really popular and the best thing about I made my own kimchi. Oh I can I make my own Kimchi in here I feel kimchi by the bottles at my place right. Yeah. Yeah and I had. Like five or six different kind of gives you cucumber Kimchi, you know Korean radish ponytail. Yeah. wasabi. There's Abby letters that has a wasabi flavor to it, and I turned that into so good wasabi more of that. okay. Yeah wasabi taste. Mmm Okay. It's not the sauce that I use right. No actually the lettuce has that wasabi. In it so I you know, make the spices and I fermented and when you it has that vaa kick for sale right now. huh. Oh, I'm gonna purchase first year what's your favorite dish like on your menu line? it's be ordering. Okay. You know what actually on my list When I eat a couple of times, I get kinda get sick of it. I'd rather like go to McDonald's and eat but. That's that's how it is cuz I cook all day. I'm sick and tired of my own dish, but if I had to choose and if there's something or thing called content, I don't know if you're familiar with that. pick up. Yeah. it's ginger. Yeah. What what? what is that? actually? I put tofu jeng you know me and spices. It takes a lot of effort and long time to make it. but it's something that you put in Ara well. And meet together, but it's something that a lot of Americans here. they're not familiar with. It's like the old school kind of dish and I put a little bit of American touch to it, but the Koreans are loving it. I think that's my one of my top dishes right now. Oh my gosh. Okay. Nobody sells that I don't remember my mom doing stuff like that. Yeah. Yeah. Yeah. Yeah. It's really it's but it's like a danger flavored so I put it together. It's it's totally different from what we see just regular danger hmm yeah no I am just reading the different oh here's a question actually shocking ah wait just shut can name his restaurants after boost is so yes so yeah so how did you name the restaurant how did that came out to be like ah you know what every time I open up a restaurant I never put up a cream word and lot of ah elderly Koreans they just be the English And they have a hard time seeing that is a Korean restaurant and they were like. Oh that's American place. That's not go there even when my food for days, I forgot to include a Korean war somewhere, so the Koreans recognize that it's run by a career, but I can do that. so I at this one. I wanted to make sure because it's a gastric right and I just wanted to make sure there's a Korean word in it in a logo, so I put two in a shape of alcohol bottle. Like you and then I put in it and I say you know what yeah and I had to get approval for my wife so she'll approve. thank you so that's the aspect of it. That's great, like even with this like I actually haven't seen this kind of fried rice before so I'm about to eat this one next. Oh my God This food fried rice with like this egg on the top, But what is this chef chef like okay? This is it's really. cuz I'm always thinking why why why when I'm cooking right? you know, I don't know if you guys are familiar with Jamon, you know jumping right. Yes. yes, you eat it with noodles right and it's a soup with seafood right and it's like one very popular dish in Korea and even here you eat it with rice. You eat it with noodles in a soup form, and I said, like why don't they have a fried rice for none of the Korean restaurants? have this frye? Not even a career, so I see let me turn it into a fried rice cuz a lot of Americans fall in love with a lot of different fried rice, so I just turned it for rice and it's it hit a lot of people. Oh my God. It's sounds like Pisa paella is that right? yes exactly exactly see we need to we need to if we brand it more. people will know about it too, But I mean without the branding this. Amazing. So, like for those who are watching if you're coveting my food, yes, there's reason to because it's so good. but yeah, I mean, like with with I mean this is this is great. I mean I think in regards to the variety and the options that you have, it's still authentic Korean, but then there's still options for people that might not be used to it either. So I like that that's good well. so what would you? what would you recommend them for somebody who's not used to Korean food? but something that's like would like be okay? Like you know American taste buds, Oh American taste buds all of the things like the kids might enjoy like let you know, don't right. It's like one of the favorite dish. I believe it's for a menu that you could easily kinda get into Korean, but not like we looked at you know what I don't like this. I don't like that. It's something that they can enjoy and then move on from there cuz it's pretty much the same to me way. It's fried and breaded, but it is different. I took I believe the 30 year back in the career where I was really popular is the cost that you kinda faded out in United States and you know what that's a great sauce and I kinda reinvented that and I created it and people love it. Alright. This is often called. Yeah, it's pork with the sauce is amazing. Oh my gosh you guys are vegetarian. so I don't know I don't wanna like go after you. I just carry him. Yeah, but you know kind of be right. I team there's Yeah. Yeah. I have that. Also. I have two different kind. I have this barbarian, which is a beef back ribs. It's like huge. It's about foot long and it looks like a big. What do you call it? You know Homo sapien kinda looking bone with a meat on it, so I called it barbarian named barbarian. Oh my gosh. I love Caron. Oh my gosh I actually I would say that that would be friendly for anyone. Yeah. Yeah. It is yeah because it's just. Incredibly like like melts in your mouth type of meat right off the bone. so yeah, most Americans are when they say they say jerky and it's always on a barbecue or up there and take it. You know like a soup, they boil it more tender. all the fat is out from it so as she lived a more healthier and they never tasted this tenderness from just you know, barbecuing it. I didn't think of it and the people. Little bit of sweetness the soy sauce salt in it and the garlic and all that together combined it to one and the meat just falls right off the bone and people love it. So yeah too bad vegetarians. so I'm not clearly. but like you know I have yes and every once in a while So, oh my God, I love you. I love eating meat. so most of my menu is catered to what I love and what my wife loves, but as I get old. I don't know I'm kinda changing, I'm kinda going into more fish and seafood. Now. I think the Koreans are doing in my parents. We're doing it and I'm kind of doing that. you know what I would eat meat all until I die, but I don't know my system is changing so I might create more vegetarian dishes and some vegan dishes too. So I see a lot of vegans in California. so yeah, I'll be there. I'll be there Chef chef one of my one of my I have this bucket list of things that I imaginary we want to do and one of them was a. Vegan Korean restaurant and so oh my gosh when you're just like I was like Holy crap. that's amazing. Yeah, I will go I will seriously or like it's very difficult. You can't find that in Korea, I know I know a lot of vegan and vegetarian restaurants out there. I'm not saying they're all bad, but it's it's so expensive. I don't know why they're charging so much then I ate a couple of places some of them place the. Good but I would say 60 to 70 percent of the places are not optimized standards and I thought about opening a vegan or vegetarian Korean restaurant. It's on my bucket list too. So I'm I can't I we even named the chef Kang's vegan so we we might be there. Okay. I'll see you there. We're often seriously. I will be regular. Oh my gosh and the chef like you're. Seafood items in here and the vegetables they're like so fresh, they're Super juicy like it's really cool. Holy crap so, oh my God the shrimp oh. I am like enjoying this for second chef how long have you so like alone have you been cooking ah and like been like beating the community because I know that once we announced the restaurant was for episode ten I got a few responses were great you should go he is a great person like his food is good I like I was getting responses here in there and I got all that's great like people from the community already know who is and so it just made me Like for those who don't know you who are you like what's your background with the food? oh, yeah most of my customers. They know all about me. Actually I became a chef only four years ago and when I you know financial world of mortgage broker for 16 years and I got tired of it and my wife gave me the boost is that you could do whatever you want now. so we started at home with my wife and then that kinda went. Well and four months later, we did catering and then another six months later, I was in a food truck and then a year later, a restaurant and another year later, gastropub and a restaurant so more than four years. I I actually doing what I love to do and making a living. so without my wife, I think I was chef King would have not existed, but she's the important to me because I had doubts about my coach and I you know what I'm a pretty good cook. Commercially, I don't think I'm that cool and my wife said. You know what I went to a lot of restaurant and you kick ass and I could do it and he gave me the confidence and you know what let's do it and we started and now I'm being a lot of customers so it was her. You know she's a creator of chef KT. Oh my God. that's amazing. Thank you for sharing that story like what you're welcome. Yeah for those who are watching like oh my gosh that's amazing. I mean now with. Coen happening like I mean in your opinion, I mean they say that the quarantine is going to be until May fifteenth and then after that, the governor will be phasing it out. but then they also say that for restaurants, they'll probably be phased out in the last phase will be the very end and so like how is it been like? Will you be able to well the restaurant be able to survive for the next few months? What does that look like for you and and how can we help like I know but whatever you do. I'm we're struggling and you know more not finance, but I'm a social person. I'd like to meet with all the customers and all the books and but it's empty. I only see all these customers with mask on and some of the you know regular customer that I know I can't even recognize them now that we could survive this right now. it's not time about making money. It's more about surviving like I said before I'm lucky that I could cook and reduce those income. I mean the. Salary or what other restaurants not able to do the thing lasts for a long time. I think it will cause a lot of arm to Korean community and even other community because even when we have dining option for the restaurants the customers for them to return with you to be before I will say you'll take about six to seven months minimum and what other restaurants survive this in a hardship. Don't think so so we need all the help we can get from the government. whatever and I see a lot of restaurants are giving up and after this thing is over, I would say there would be much more and we're moving a lot because some of the restaurants that's been open for 25 to 30 years are giving up on it and we're losing because the restrooms that I love used to go and he kept that Korean tradition like even better than it was. Back in South Korea, So yeah, I'm just you know worried. I'm just worried about the wind is kind of rising a little bit more and more and there's so much the government could do for us so we can I'm just praying for everybody and you know asking all the customer when this thing is whole thing is over. Don't stay home. go out there. You know you know. Meet your friends. eat at restaurants and you know to support you know community because if we don't. I think we're gonna lose more than you know financial thing you know will lose like a big chunk of culture from our community. Yeah, I mean I feel like the government having the program the protection program you get a majority of small business owners in our communities didn't even touch that money because all the money was already used but Corporation that we're dipping into the funds. So it's like where is the help coming for you guys like there's no help whatsoever because you you yourself you haven't received any or no. No, no not yet. Yeah I applied for it, but they say the funds are depleted and my CP and I were waiting for the second for to come, but even after that we applied it, they said the the big Corporation takes a big chunk of it. a lot of the small business that they're like the end of the line and we're not getting the help that we're supposed to get so so it's it's so weird. it's so weird and pageant like for me. It's like people in Congress or people at the local or state or whatever level they're like. Oh, we're legislating this and then they go home and take a recess. Yeah, like not. Aware of how these programs are being implemented, how they're being done and like it's it's just a clusterfuck. you know, but but I mean, thank you for I mean, and that's that's something that we really wanna change. I know that pageant with organizing with me and my own organizing helping the community. That's what we really wanna focus on. I mean chef like Thank you so much for being in the community and and for those who haven't heard like we heard that something happened at your restaurant and like we wanna bring awareness to this that. Is going on so if you see it going on definitely report it, but some something happened at your restaurant. not too long ago. What was that? yeah it was after the closure. I think about two weeks and these three guys walked in through the backdoor. one of them kept my wife, busy ordering different things and changing giving a fake credit card and wasting her time while other two were going upstairs and going around and they found a bag of money and keys. And checks, and I think they walked off with like two weeks worth of cash sales and it's okay. Yeah, it was devastating because you know that time of finance be obviously the restaurant wasn't doing too well customer were not allowed to walk in, but next day we woke up my wife and I we say you know what we just lost money money is money. we have our health. nobody got hurt, but then I got kinda ticked off and you know so many people are hurting right now and these dogs come in and use that advantage to. And hurt more, and I said, I'm gonna let you know people know about this. so I posted on Instagram and ask everybody to share and I believe I got like I believe about 600 shares and a lot of people have known and I create community and got bonded together and they kinda watched out and it kind of stopped because if we didn't let people know about this, I didn't want other people to get hurt financially or even physically you know what happened. but. A lot of slow it down, so I'm thank God for that. Oh, I'm so I'm so thankful I mean. It's just crazy, I mean, I think you kind of nailed it like because people are financially hurting. We shouldn't be spreading it, but yet because we're hurting like we're spreading that hurt right now, just like what they did with you but I you had just told us briefly right before we were jumping on that something else happened to one of your neighboring businesses as well. Yes, yes, when I walk into my restaurant today. I heard the next door. There was a optometrist's place where you know. Doctor with eyes, but they are closed down, but someone has entered from the basement and just grab that place at early in the morning. There's nothing there. so I think a lot of people are getting this kind of you know, Robb everywhere, but they're not reporting it but you just happen or you know it's not next to that we found out but it's happening more than we know there's some people out there. If you reported to the police, What are they gonna do you know nothing you know the insurance doesn't cover or whatever so they just kinda blow it off. And onto especially Korean culture, you know they don't think about calling police all the time, but they try to like you know what we lost it just keep it quiet and then we'll just watch out. but I think this has to stop. I mean, is that a failure of like the police Department you think, like just a lack of trust in the police Department. Why is that I think it's just the burglars and thieves they're taking a big advantage of. People not being on the Street, all the restaurants or all the business places close early and there's less I you know for getting caught so they're taking advantage. you know, so it's quiet, you know and there's a lot of places that's vulnerable to you know if you could get in, there's no one to stop because no security guards around in a police are not trafficking or not doing the things more than they used to because it's quiet now the Prime they think the crime is not happening right. You just don't see it. It's. A lot more, it's just we can't see it through our eyes and I think we need more policeman to throw around our community because of the fact that you know the dogs that are taking advantage of lesser, you know people's eye watching it. Yeah. and I think it's also I mean just technically we just have so many things that issue like a 3040 plus year inequality. That's the the income gaps wealth gaps are and people have 23 jobs like people are financial. Distressed and like I don't know if the government realizes Holy crap, we're actually enabling people to be reactive and to use their anxiety to spread that and hurt other people like without realizing Oh crap, we should actually help all of the people financially right now, so that so that they don't even have to resort to this action and I think it's just I mean yes, there's law enforcement too. But I think it's just there's so many issues and factors involved in that and it's it is it's very. but I mean, thank you so much chef like just for being a beacon of light like even talking with you like you're just like as you're sharing your story, you're still sharing it with like this positive perspective, you know. yes, of course, yeah. now we're not gonna get me down. You know I've been the worst been there and done that I went through the actually the riot the earthquake and all that in California, I it was kind of a Dream when it first hit it was in United States. They are you know closing. Restaurants like this and you know people are not allowed to go out like I'm like this was shocking, but I had to you know forget this I I survived the worst things in our lives. You know what let's go through this positively and I'm hanging in there, but it and people are seeing that and kind of sharing that it's the energy of happiness to another in a hard time like this. So I'm always smiling. I love that. I know I love that because this is actually my first time to do a face-to-face engagement because I've been on the phone with you before Yes and it was just like. Oh my God like when I was on the phone with you, I was like, Oh he like we're on the same wavelength like we're like so it's it's good to finally meet you in person. Yes. yes. What are your business hours? Whatever you're here? Yeah. we're on the planet. But like Uber post of GrubHub call us actually we have a better deal. If you call in cuz we have a separate to go menu. That is we have a like a budget $10 menu like a Kimchi and everywhere. So I ordered you know because I don't think it's the time right now. everybody's struggling it's not time for me to make money financially. I wanted to support the community by lowering all my you know menu. State and what I've been serving before so that people could eat at home or take you a home where the spending less money, but the same quality as they would pay higher before like I started making Kimchi in a bottle because I see that the market I don't know why they're charging so much and people wanting to think she was paying way too much. So it's in a what let me make Kimchi. I could beat them and then I'm selling at a very low price. Thank you for where can we buy your Kimchi like you you sell it in like jars like yeah. we'll draw that. The market, where do you buy where do you buy that at the restaurant, we have a premade in the fridge so you can come in and pick and whatever you want and you can just take it home like the market. Oh my gosh. okay. That's good. Oh man there's an h-mart by me here that was promoting kimchi. I wanted to try it and so instead of. The kimchi there, I would say, call chef's restaurant by the kimchi there and then, and then that's how you can experiment with kimm with that. If you obviously you can order from his restaurant too. But if you wanna if you want to save money and cook from home, you can buy a kimchi and then he can give you a recipe. I can give you a recipe so I have to keep my recipe. You know no. yeah. even the this is that I don't. Believe that it is mine I'm about sharing and I do a radio show every week on a radio career. I give out all my recipes and people are saying why are all the recipes I said. It's not it's people you know so, but you know even though they cook it at home, they use my recipe. That's yeah. it's awesome. The thing is it has to be good. You know everybody can make Kimchi you know they say I make Kimchi whatever Yeah, but it is it good I. Word of God, My kimchi is bomb. It isn't good. I don't sell them because you know the Korean elderly will kick my butt and say you know what give up that kimchi. you know you ain't it, but they're buying from me and they're coming back again and again, and there's a reason for that you know so if you want a traditional authentic kimchi, I have it and I believe it's like a 40 percent lower than the market. Holy crap. Yeah. So it is right now it's time of supporting each other. That's why I lowered the menu like I said the kimchi even. That's rare to buy like I don't know you guys are familiar with that. It's a fresh oyster fermented. you know you think Koreans love that with rice, okay and that because everybody's staying on doing that thing. So I said, you know what let me cook some, you know really good menu and with a low price so that everybody can enjoy and it's we're very happy about it. So yeah. Oh my gosh. my grandma used to. it's a random question, but my grandma used to make this crab where like the. Like I had this very like had the sauce in it and it was like boiled or something, but the meat was just so good and it was like the salty spicy kind of sauce. you know what I'm talking about Ara brush Well, no, it wasn't. I don't know it was okay. Maybe I'm just gonna lose you guys but like it was in like some sort of sauce and like I don't really like seafood, but I like this just like pick it out of the crowd, but like it kinda came out almost trends. Yeah. yeah. Yeah. Yeah, you know, you know you know the you know the Conn do you know fresh crab with it's like fermented, you know soy sauce. Do you know you know Koreans. It's very very popular in Korea is one of the most. yeah. yes. okay. That's what I'm talking about. Maybe alright Okay. you may not open Wait. There's a spicy kind and there's a soy sauce kind and people love the soy sauce. And people who knows how to make really good is what she had. She had. It's the with the pepper and with a spicy, but when you squeeze it fresh crab meat comes out soft and with the sauce together, it's really good and I saw it here. I saw that for a few weeks. Oh my gosh can you start? Can you start selling that as a punch on and then I'll buy that for you which one do. Oh yeah because you want that. Oh, that's too much you're. No, no let me know I'm thinking of doing the fresh crab Cann can come down. I'm gonna do it. I'll have it ready within 10 days and I'll have it every day to sell and I it's really good and it half the price. What other on sale? It's right now. it's not about making money. I swear to God. It's about supporting each other and I'm just thankful that customers actually walked in to have things over. so I'm just keeping it where the prices are low and everybody could enjoy. You know taking out without spending so much money on it. Okay. That's an amazing attitude during this time, I don't know how small businesses are. I mean it's it's great. I hope more small businesses are trying to have this attitude right now with like how difficult it is and also just the fact that the government you know the whole P program is just it's so it's such a sham, you know as David Kim canas.
