Well, Frico is cooked/burnt cheese that originated in Friuli, Italy as a way to recycle cheese rinds (gotta love Italians!). Frico in America has evolved into a burnt cheese crown that surrounds any good DSP (Detroit Style Pizza). But, wait, what is Detroit Style Pizza?

Detroit Style Pizza was created in the 1940’s by a woman who took a blue steel pan her hubby brought home from the auto factory he worked in and made a Sicilian pizza in it. Much to her surprise, the pan created this rockin’ cheese crown that blew Michigan minds. Soon after the family opened a pizzeria called Buddy’s selling the steel pan pizzas and this beautiful variation on the best food in the world was born.
