Like all Indian dishes this looks much more complicated than it is. The critical thing is to measure out all the ingredients and set them on one side in order of adding to the pan. Then once you start, it really is very quick. I like this korma because it is DAIRY FREE! the cashew paste is a common addition to South Indian dishes along with coconut. [ 209 more words. ]

I bought some amazing fresh aubergine (the small purple variety from India) and okra in Little India and found this perfect recipe from South India, which combined the two. I served it with my chicken korma.Once again the trick is to line everything up before you start to cook, and then it is surprisingly quick and easy. [ 169 more words. ]

Sometimes we take life too seriously. I am cynical about the vast numbers of GF people (who mostly are just like this!), but obviously sympathetic to people who are celiac...have a giggle anyway. Now Dairy, that IS another issue....

Nicky Spinks is a great example of a cancer sufferer who has achieved great things through positive thinking and maintaining her fitness levels. I'm not in her league but I like to think that I could do something equally inspiring one day, albeit on a smaller scale! Maybe sponsoring another few schools....it's about each of us trying to achieve our full potential despite illness and setbacks. [ 917 more words. ]

It's 2 for 1 today! After a spell in Tamil Nadu and curried out, I felt the need for a hot/sweet/sour combo and some pork (sorry folks - occasionally I do eat pork which, according to Traditional Chinese Medicine, is OK - it does not qualify as red meat). [ 364 more words. ]

A good day to begin another course of my own form of immunotherapy - acupuncture. All these deaths remind me we are all mortal. Carpe diem.

We had a cookery lesson in our wonderful hotel Visalam in Chettinad and earned how to make this dish. I think this tastes fairly similar to the one Chef made! Anyway it is delicious, a dry curry, good with chapattis, and benefits from some spicing the Chettiars brought back from Burma - star anise, dried mushrooms - as well as more local ingredients, such as curry leaves and coconut. We had some delicious food in Tamil Nadu and I fell in love with okra all over again. This is not quite how we had it, but we did eat poriyal a couple of times and this is easy because there's no onion or garlic. I served it with my other discovery, Chettinad chicken. Poriyal btw is a simple dry stir fry of any kind of vegetable, based on the S Indian 'tempering' method of cooking, where you fry the mustard seeds, … [ 250 more words. ]

With a houseguest and not much in the fridge apart from half a papaya, some carrots and an apple, I invented this truly delicious juice to get him going for his meetings. Being orange, and containing both ginger and turmeric, it is immunity-boosting and packed full of vitamin C. He liked it so much I now have to make it every morning!!! [ 44 more words. ]

For years now I have avoided drinking shop-bought smoothies and fruit juices. Instead I bought a juicer and make my own. In general I am not a smoothie drinker due to the dairy content and I don't do almond milk, because of the ecological impact - almonds are very thirsty and are grown in California which is experiencing a terrible drought...also very calorific in such concentrated from. This is one of the most ubiquitous dishes in Laos; it can also be made with chicken but I think the ingredients vary a little. I will experiment and update! I used a local white fish, but you could use any white fish, fillet, best with no bones. I spent ages tweezing the bones out of my fillet! Serve with sticky or plain rice and a green veg - here I had steamed kale. [ 260 more words. ]
