Today's kitchenture (new word I just made up) is Maple Oat Banana Bread from the Thug Kitchen cookbook (http://www.thugkitchen.com/). I've made it before and it's a fairly healthy and easy bread.
In the last week or so I've made two batches of yellow split pea soup with slight variations. The first one had onion, carrot, peas, kale and white beans and was quite delicious. The second, had all the above plus sweet potato and potato cubes. I'm onto making my third one today (by special request) which will be even better. More sweet potatoes and I'm making a much bigger batch. Perhaps a photo later?

Day 7 of The Master Cleanser. Feeling great. Had a few moments of temptation over the past few days, but I remained strong. I've done many types of cleanses over the years, but this one is always my favorite "go to" cleanse. Easy, uncomplicated and it works.
Day 2 of The Master Cleanser. Feeling good and getting things done. Bring on your best vegan food porn! I'm ready to start planning what I'll eat when the cleanse is finished. #mastercleanse

My all-time favorite tortilla--the Trader Joe's Chili and Onion vegan tortilla topped with freshly made garlic hummus, vidalia onion, tomato, zucchini, green onion, cilantro, avocado, black olives, homemade coconut bacon, dash of my secret seasoning and a splash of hot sauce. Tasty.
My first ever batch of homemade coconut bacon! I'd like it to be a tad saltier...next time. Here's the recipe I used (there are some substitutions you can make--ask me!): 3.5 cups coconut chips (these are the bigger pieces, not grated or shredded), 2 Tbl liquid smoke, 1 Tbl Braggs Liquid Aminos, 1 Tbl pure maple syrup (use grade B), 1 Tbl water, 1 tsp smoked paprika. Baked on non-stick pan for 20-25 minutes in 325 degree preheated oven. Stir it around with a spatula every 5 minutes and watch closely near the end so it doesn't burn.

This is about a 50/50 mix of healthy and hypocrite. Mostly just because of all the sugar. Next time I'll adjust and use less.

Orange Whip!
Juice of 2 oranges (or about 1 cup), orange zest from 2 oranges (mine had some green areas so I didn't zest those spots), 2 ripe bananas, 1.5 tsp… vanilla, 1/2 cup aqua faba, 3/4 cup sugar (I used Zulka Morena), 1/4 tsp cream of tartar, 3/4 tsp agar powder (or use 1 tbl agar flakes). Puree bananas, orange zest and vanilla in food processor or blender. Whip the aquafaba in the usual manner until stiff peaks, add the cream of tartar, add the sugar a little bit at a time until fully incorporated and no longer sugar gritty. Heat the orange juice in a small sauce pan and add the agar and stir constantly for about 5 minutes (I let it get a little boiling). Add the orange juice to the food processor and process till smooth. Fold the orange/banana mixture into the bowl of aqua faba and put into ice cream maker and then into freezer for a bit more. This will not freeze hard like ice cream but is fluffy. Oh, and it's not very orange in color, but I don't care!
