Someone asked about my recipe for Spinach orzo salad so here it is -

Buy a bag of baby spinach. Chop into small pieces. Cook orzo, drain (I use about a third of a box). Add cherry tomatoes or chopped red pepper. Toss with lite balsamic dressing.

Instead of this dressing sometimes I will make my own - 2 T of oil, 1 T of teriyaki sauce, a sprinkle of garlic powder, 1 tsp of vinegar. This gives a nice flavor if you do not feel like overpowering the salad with dressing. Add a little more oil or teriyaki if needed since the pasta will soak it up a bit. Mix and taste first until you get the flavor you prefer. Sorry I can't be more specific. This is how I cook - by taste, not with a list of amounts LOL so you're sort of on your own with this. It's a great salad for summer though. Happy Memorial Day!

This month I'm celebrating the 8th anniversary of my Small Quilt Talk Yahoo group. We're making quilts using the Country Lane block, which happens to be a repeat of our very first small quilting challenge from 2008. I'm going to like this quilt much better than the first one I made 8 years ago. Funny how our tastes change over time.

Only 20 blocks left to go! After I finish appliquing those silly diamonds in the corners. Then the dreaded triangles . . . . But there are only 52 of those (and 4 corner kites). Maybe there's a chance I WILL finish in my lifetime.
