Tarte flambée is an Alsatian dish, speciality of the Alsace region and neighbouring areas (northeast France, south Germany). It is made of bread dough rolled out very thinly. It is a peasan dish, just like pizza. The original tarte had a rectangular shape and was eaten burning hot and rolled. Nowadays, most restaurants serve them round. Typically it is covered with fromage blanc or crème fraîche, thinly sliced onions and lardons. It is one of the most famous specialties of the region.
