"Glass cows and brass beefsteak machines"

I had to share this article from a 1894 issue of "Food and Sanitation" magazine about a renowned scientist's predictions for how we would all be eating in the year 2000. The Victorians were so excited about all the technological and scientific advances they were making, they were confident that they could solve any problem by inventing the right machine. (If only!) According to Professor Barthelot, all consumables in the future, inclu...ding organic produce, would be made in factories out of chemicals. Beefsteak would be replaced by "compound tablets."

Here's a quote: "Wheat fields and corn fields are to disappear from the face of the earth, because flour and meal will no longer be grown, but made." And another: "The epicure of the future is to dine on chemical meat, chemical bread, chemical vegetables, drink chemical wines . . . "

This, obviously, was before the word "chemical" had acquired negative connotations in regard to food. The author of the article, however, did comment wistfully that "The idea of glass cows and brass beefsteak machines was truly scientific, but there was a lack of poetry in it."
