This experience is beyond excellent! Manoa Chocolate is hidden on the 2nd floor of a nondescript bu...ilding on Uluniu St in Kailua HI, but the dozens of 68 Kg (~150 lb) burlap bags of raw Ecuadorian cacao outside hint at a journey ahead filled with wonderment and discovery. Inside, it is Willy Wonka gone Hawaiian, but owner/genius Dylan Butterbaugh is much kinder and much more accessible than the eclectic "Willy." Along with chocolate sommelier and presenter, Arie, they (and other staff) take you on a historical and geographical tour of cacao and how it winds up in flavorful tidbits in your mouth. The truth is, the big name-brand chocolate makers have dumbed-down chocolate for decades, yet folks like Dylan and the many other artisan chocolate makers are reaching back in time and sharing what Mother Earth can do for cacao ... in Hawaii... in Ecuador... in Madagascar... in Brazil... in Tanzania... and dozens of other locales across the world. In turn, they share a world of flavor - and I do mean a WORLD of flavor! - in turning that cacao into wonderful craftmade chocolate. And they show you how, up close and personal.
