4 cups beets, parboiled, cooled, skin slipped off, coarsely chopped
2-3 cups rhubarb, raw, chopped coarsely
1 Tablespoon coconut oil...
1 Tablespoon grated fresh ginger
Roast at 250* for 2 hours, Enjoy!
