Well, I can't thank everyone enough that came yesterday for our Victory at Adwa Day celebration. We will be 100% open very soon, so thanks for your patience. Progress progress. Got the whiteboard up today and test sticker printed for oversized Scrabble. If the polyurethane doesn't destroy the sticker, we have ourselves a pretty good idea for combination study/restaurant tables. Stay tuned............Bless up!
Just perfected the dosa chemistry and technique today. Looks like we are one step closer to offering a dosa-sambar-chutney breakfast. The secret ingredients are baking soda, speed, cast iron and a wet rag if you were wondering.

Progress progress, we will be opening later than planned, but we are counting the days/weeks til opening. Fresh paint on the walls, fans hung, it's only a matter of time. Soon Cambodia's first and only I-tal cafe will be right here in Kampot, but I-tal food is just a portion of what we will be offering.
Fans mounted, barstools acquired, a coat of paint and two bar tables and we'll be open very soon. More time.....

I just finished a small batch of organic noni roots drink (left) and jicama roots juice (right). The noni was cold-pressed after a two month fermentation, and we've only added water and local Kampot palm sugar. This is pure noni flavor with no other fruits or vegetables. The jicama roots juice is also pure jicama with no other flavors other than local Kampot palm sugar. Sorry for the lack of a jicama in the picture for reference. 500ml bottles are 7,000r each. We have 350ml bottles and 500ml bottles. 350ml bottles are 5,000r and 500ml bottles are 7,000r. Available for pickup across from Samaky Organization near the Bus Station-Salt Worker's Roundabout connector road. Delivery possible in Kampot city if you buy several bottles. The cold press is up and going. This little creation is cucumber with fresh moringa leaf and bit of carrot and ginger. Ital is vital.
Attention: I am back from a 6 month exodus from Cambodia. It was a whirlwind adventure, and I'm thankful for every experience. From Tirana to Kentuckiana, and Kingston to to Leadville, and back full circle again in Cambodia. I have been awaiting room #1 in my building for a few years with dreams of making a "tiem baay" here in Kampot. I finally have street access and I'm discussing details with my "mcah pteah" to get Royal Habits a brick and mortar location for the first time. Stay tuned..............
Making sambar now. I will be dropping it off at Rusty Keyhole 2. I guarantee it to be the only sambar between Snooky and PP. This one's full of yardlong bean, eggplant, potato, and of course all the other usual sambar things. I-tal is vital, eat red, gold and green for your health. Coming soon to Shqipëria.
Just dropped a mixed bean curry off at Rusty 2. Not sure how they are serving or selling it, but usually with white rice. It's Adzuki and Pigeon Pea w/ carrot, eggplant, potato, green onion, green tomato, and much more.
Heads up! I will be cooking the occasional masala, curry, and sambar for Rusty 2 to drum up extra money for the relocation to Albania. There should be a nice batch of Adzuki-Pigeon Pea Curry sometime late tonight or early tomorrow. In addition to this, if anybody would like a pot of curry delivered to your door, $22 will take care of that, and then you can portion it and store it as you like. The temperatures have been a bit high lately, and I don't have climate control. I've had some trouble culturing the lactobacillus in this super hot weather. However, I have a batch that is looking good so far. If things go well, there will be a new batch of probiotic roots in the next week or so. This one will be a new formula including frangipani flowers and sandalwood leaves supplied by Kam Spices.
