Bluebird Bakery

Most big ideas start with tiny roots and our bakery began life on our kitchen table in the heart of York.
After a full night baking, we sold our bread at a ma...rket stall and hand-delivered a few loaves to our neighbours and the local community pub. We couldn’t have been any smaller.
But, we did see an enormous appetite for ‘real bread’ – the antithesis of mass-produced additive-loaded supermarket loaves – and the fledgling Bluebird found a new nest: a restored gig-house, now our Malton bakery and shop. This was closely followed by a second residence on York’s famous Shambles and – most recently – a third shop in bold and buzzy Leeds’ Kirkgate Market.
We are Al and Nicky Kippax – and we’re joined by brilliant bakers and bread buffs who help to shape our small enterprise and keep it ticking over nicely. Our vision is just the same as it was back in 2011: to bring back the lost tradition of hand-shaped, artisan loaves which are nutritious and delicious.

Last year I was invited by Maverick TV to be a food industry expert for the current Michel Roux Jr series 'Tried and Tasted, the Ultimate... Shopping List'. Mrs Jam and myself went down to London to film back in October. The episode we're in screens tonight where we're blind taste testing BBQ Ribs, something I've eaten one or two of in the past, along with some other tasty treats.

We had an absolute ball, Michel Roux Jr is a lovely welcoming guy and Fred Sirieix from First Dates was truly charming, I had to prize Mrs Jam off him with a crow bar!! We were very lucky and were invited by Fred to his restaurant, Galvin at Windows on the top of Park Lane Hilton, a really fantastic evening! What a great way to finish of a day we'll never forget.

We're really excited to see the episode this evening, fingers crossed they've been kind to me in the edit! Check it out, 8pm, Channel 4!
