Although it could be argued that many of the foods that enjoy their own "national" days (escargot, frappes, noodle rings), are less than deserving, pumpkins are another story. These spheroid members of the Cucurbitacea family are (as opposed to those apples everyone thinks are so patriotic) native of North America, just like the turkey. Unfortunately, a great majority of the pumpkins grown in this country are carved, candled and left to decompose on front stoops come November 1. And that's a shame because this versatile gourd delivers a versatile and unique flesh that lends itself to applications both savory and sweet. And then there are the seeds!
