Jun 12 ·  · It’s #FoodieFriday! Reminder: You're a freaking grown-up and can have pancakes whenever the heck you want! But with great power comes great responsibility, and you need to make sure your pancakes aren't just sugar and empty carbs. So how bout... LOW-CARB✅, GLUTEN FREE✅, DAIRY FREE✅, SUGAR FREE✅, PROTEIN✅ PANCAKES?😋 In a future post, I'll explain why I try to check as many of those ✅ as I can, but for now, think of this: You go to the hippest restaurant in town (IHOP), and slam down a stack of some Rooty Tooty Fresh n' Fruities. Then you cancel your plans for the rest of the weekend, because you are officially 💀. But these pancakes? I eat these and I actually feel like I've had a LIGHT breakfast. Plus, they're great pre-workout! Okay, you're sold. Let's make 'em: 👨‍🍳Hero Hot Cakes- (Makes 6? 7?) -3 big ol' eggs 🥚🥚🥚 -1/3 cup dairy-free milk 🚫🐮(whichever's your fav) -1 banana🍌 -1/2 tsp sea salt -1 cup chopped up strawberries🍓 -1 tsp vanilla extract -1 tsp baking powder -1/4 cup coconut 🥥 flower -3 tbsp vanilla protein 💪 powder (chocolate works too!) -1 FimoDrizzle of maple🍁syrup (~3 tbsp?) -KEY INGREDIENT: 1/4 cup Nutiva *butter flavored* coconut oil (plus a lil' extra for the pan) (I got mine on Amazon for $15) Steps: 1. Heat a pan on medium/medium-high heat and add a lil' bit of the Nutiva coconut oil to get it slick 2. In a big mixing bowl, mix up: the eggs, the "milk," banana (mashed up), and the vanilla. 3. Microwave the 1/4 cup of Nutiva coconut oil to melt it. Add it to the mixing bowl and work it in. 4. Mix, mix, mix, until it's all smooth. 5. In another mixing bowl, mix the: protein powder, baking powder, flour, and sea salt. After they're all mix-y, mix-y, pour that into the other mixing bowl and... keep mixing. 6. Time to scoop some of that sweet batter onto the pan. Note, this isn't gonna be typical liquid-y batter. This is gonna be some meaty batter. That's okay! Just drop a dollop and smooth it out to be roughly a medium sized pancake. 7. Give each pancake about 2 minutes per side, or til the color is how you like it. 8. Add a little more coconut oil to slick it again and make another one! 9. Top with strawberries and 🍁 syrup! If you make this, tag it with #EpicEats on Instagram so I can share your post!
