For millennia the backbreaking work of tortilla making has been performed almost entirely by women. Picking, cooking and grinding the corn the traditional way on a ‘metate’ takes literally hours and is far from easy. Women have carried this tradition through the centuries and, like most things in life, it’s due to their hard work and sacrifice that humanity is where it is. Today we pay tribute to women everywhere, and acknowledge the vital work they’ve done in the background throughout history that receives far less credit than it should. Gerardo is in Mexico and visiting the local market in his hometown of Naucalpan. "I used to come here as a kid with my gran and my mum every week. Being back here reminds me of my childhood; I remember all the smells and sounds from the stallholders - the pride they have in their produce and the passion they use to sell it makes for an amazing atmosphere and a lot of laughs. Everyone is happy and having a great time."

Want to know how to make real corn tortillas? These señoras are showing us perfectly. After being soaked overnight, the corn grains (‘nixtamal’) are stone ground on a ‘metate’ to turn them into a dough, or ‘masa’. The masa is then pat out into a tortilla, then put on a very hot ‘comal’ (or pan), until cooked. We always say make sure your pan is very hot before you heat your tortillas – look how hot they got it!

Chocolate, tomatoes, avocados, chile, vanilla...it's hard to imagine that all of these didn't exist outside the Mexican region before the 16th century! Imagine Italian food without tomatoes, or Asian food without chiles. Gracias Mexico, you've greatly enhanced cuisines all over the world!
