How do I cook that Heritage Turkey? Heritage turkeys cook more quickly than supermarket turkeys. We recommend brining the turkey in your favorite brine overnight. Then take the turkey out an hour before placing in the oven at 350 degrees. Cook until the thick part of the thigh comes out between 150-155 degrees using a thermometer. Remove from oven, tent for 30 minutes and rest before slicing and serving.
