One pan Orecchiette Pasta:
2 tbls.olive oil
1/2 diced onion
salt/pepper to taste
8 oz. spicy Italian sausages,casings removed
3 1/2 c low-sodium chicken broth.divided
1 1/4 c orecchiette pasta
1/2 chopped arugular
1/4 c finely grated Parmigiano-Reggiano cheese
Heat olive oil in a deep skillet over med-high heat. Cook/stir onion with a pinch of salt 5-7inutes,add sauguage and cook till browned 5-7 min.
Pour 1 1/2 c broth into mixture/bring to a boil. Add pasta,adding remaining broth as needed,cook until pasta is cooked thru and most of the broth is absorbed about 15 min
Stir in arugual and cook until wilted.Ladel into bowls and dust with cheese
Update: We are finally back to full power this afternoon. We still have a lot of clean-up, new supplies, and then preparation to accomplish, but we are thankfully planniing to open tomorrow(Tue) with our regular hours on kind of a limited basis. Thank you all for continuing to support us.
