After months of driving by Galloway farms, I finally stopped to find out what all of the talk is about. I walked in on Dennis, the proprietor, while he was working on his famous and secret family reci...pe for curing country hams. Not only did he give me a tour and tell me the story behind his family's tradition, I left with his bacon and eggs from a local farmer. Both lived up to all the hype. This place is tucked away in Gallatin, but is worth the trip. Smoked and hot sausage, country bacon and ham, homemade jams. You can't get this in stores. The owner Dennis is very sweet and makes you f...eel at home. See More

we have so many request for smoked sausage and pinwheels these are at the top ofmt list to get done' thanks for being patient

out of hospital. Gotta whip this dang stroke be back in smokehouse in a coiuple of days to smoke some sausage and chops

Labor of love. Last winter I started the process by trimming and Hand salting the hams. This took three rubbings for 24 days. Then transferred the washed hams t...o the smokeroom where they were smoked for about a month with green shagbark hickory (cut here on the farm). Left to hang for the rest of the year.these aged molded beauties become a delicious Tennessee Country Ham. Thanks to my dad for starting this in the early 60s and after 50 some odd years Id say we got this process down to an art
