Zambrero and Mad Mez, eat your heart out! 😋 Naked Taco Bowl with Beef and Sweet Potato 🤗 Ingredients: 2 small sweet potatoes (macros are based on baked weight, 300gm total i.e. 150gm per serve) 500gm lean beef mince 1 medium brown onion 2 garlic cloves 1/2 tsp ground Mexican chilli 1/2 tsp paprika 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp Himalayan rock salt 1/4 cup water 1/2 Lebanese cucumber (80gm) 1 medium tomato (120gm) 50gm tasty cheddar cheese 20gm rocket 2 pinches fresh coriander 6 thin slices fresh jalapeño Old El Paso taco sauce Tobacco sauce (optional) Method: Slice sweet potato thinly and bake in the oven at 200 degrees for about 20 minutes, turning once, or until cooked and crispy. Dice onion and garlic and cook in frypan with a little water over low-medium heat until onion is translucent. Add beef, turn up the heat to medium-high and stir until cooked. Combine salt and spices then add to beef with 1/4 cup water. Continue cooking over medium-high heat until spices are evenly distributed throughout the beef. Distribute baked potatoes evenly between two bowls. Top with half the cheese. Top with beef. Top with remaining cheese. Top with tomato, cucumber, rocket, and coriander. Drizzle with taco and Tabasco sauce. Serves 2. "I wouldn't say I have changed a huge deal but the main things being - no fizzy drinks except for on the rare occasion. I have cut down on alcohol a huge amount. If out drinking I have tried sticking to vodka soda etc. Regular eating and organisation, thanks to you. Being more consistent and putting in the work at training. And a huge one has been cutting out easy takeaway options like Maccas and KFC that are just up the road, etc. I still enjoy all foods, but I'm being sensible. I love the freedom of eating what I want, but knowing what I'm putting into my body. Also, having the support group you've created is so encouraging!!!

May only be little change to someone else looking at it but I see such a difference in myself. Amazing how a change of lifestyle can change you so much over time without you even realising it."

I loved Short Street Store's Crunchy Cacao Buckwheat Granola so much that I simply HAD to make my own! I found a recipe in any New Roots' website, omitted the coconut sugar, and ended up with this deliciousness!!! Granted, there is no CocoWhip to boot, like Short Street's version... but it will certainly tide me over until they re-open on 6th Jan!

The My New Roots' Recipe (minus coconut sugar) makes 900gm.

50gm serve = 214 calories...
