POTLI PULAO/YAKHNI PULAO:
ingrdnts: 1kg mutton,750 gms rice Basmati,2 chopped onion, garlic 1 flower,20 gms ginger chopped,6-7 green chilles,Salt garam masala (all in raw form, avoid chhoti ilaichi),25 grm Saunf, coriander seeds 1 table spn.
Preparation:Make a small potli filled with saunf and Coriander seeds. Now boil mutton along with Garam masala, garlic flower, ginger and 1 chopped onion and Potli. Plz give Yakhni a gud time On gas stove, so that mutton is nicely tendered....
Heat 1 1/2 table spoon desi ghee in a vessel and put 1 chopped onion in the vessel. stir properly till onion turns golden brown, now take mutton pieces out of yakhni and fry them for 5 mins in the vessl having fried onion, Now turn yakhni (mutton soup) in the vessel and bring it to a boil, now put Rice and green chilly in the boiling yakhni, add salt according to taste. Cover the vessel and attend it the way you attend rice when its boiling. Yr Yakhni Pulao is ready... Serve it Chhach Raita !
