Fresh durum wheat flour made with a millstone. Long shelf life flours loose many nutrients because the industrial process and shelf life destroy vitamins, mineral salts which are contained in the germ. Old farmers used to keep the grain and go to the mill periodically to produce flour which was consumed within few days or weeks.

After 48hrs leavening the bread is ready. The result is an amazing bread: a very crunchy crust and soft inside. I want to share this short video so that you can see and HEAR what I said :) Later on I will upload recipe and method ;)
