    I went gluten free January 1st of this year, it was due to my Grandmother having Celiac and my mother, my aunt, and uncle all being diagnosed as allergic. I figured what the heck try it out .... I noticed an immmediate rise in energy and less stiffness and pain in my joints .... my youngest daughter (7yrs old) who also showed signs of improvement stated that her belly "didn't hurt anymore" and we noticed that her belly which was always kind chubby and swollen no matter how much/little she ate flattened out almost immediately .... my wife and my oldest daughgter showed no change and have since moved back to a "normal" diet ..... As much as I miss good bread and things made with flour tortillas ... the improvement has been noticeable enough that this is my new lifestyle .... Sensitivity may not be real but not having Gluten in our diet has been very beneficial for my youngest and me

      I have issues with it too since I removed all grain from my diet for four months. I never had an issue before that I knew of. Some say it's not real - but if you have an issue - you know it is real. Sometimes I decide to eat pizza, drink a wheat beer or eat bread and take the hit and then I pay. I seem to react stronger to non-organic, than organic. Not sure what that is about.

    I noticed the same "changes" that people who claim to have gluten sensitivity report - less joint pain, weight loss, more energy, less bloating, etc -- but I still eat gluten. What changed was that I cut my carb intake significantly. I think a lot of people who experience problems they think are attributable to gluten are actually seeing the ill effects of too many carbs in the American diet. When you restrict the gluten, you end up having to naturally cut out a lot of the high carb food sources you are used to. I lost 25 lbs a feel SO much better by sticking to specific carb to protein ratio - with no specific attention paid to products with or without gluten. When I start eating too many carbs again, my joint pain and weight start coming back.
