Scottish influences on Polish cheese! For those of you that read Polish, here's a piece from the Tygodnik Ilustrowany, 303 (1865). It mentions the Scottish farmer, Dikson, who was invited to Poland to share his expertise in breeding cattle, and thereafter produced a popular and much sought-after Cheshire-like cheese on the Zamojski estates at Jadów in Zawiszyn manor.
