Für morgen, Gründonnerstag, muss es Grüne Sosse mit Pellkartoffeln sein (wir haben das ganze mal einen Tag vorgezogen...). Die 7 Kräuter, die in die Sauce gehören sind: Schnittlauch, Borretsch, Kresse, Pimpinelle, Kerbel, Sauerampfer, Petersilie. Saure Sahne, Schmand und hart gekochte Eier mit rein. Frohe Ostern!

Traditional meal on Holy Thursday in Germany (yes, we are one day early...): Grüne Sosse green sauce aka salsa verde) made with 7 herbs (chives, borage, cress, burnet, chevril, sorrel, parsley), sort of sour cream and boiled eggs. Served with boiled potatoes (Pellkartoffeln). Yummy!

Red Thai curry with fish, baby bok choy, scallions and basmati rice

250g firm, white fish fillet - I took affordable pollock – Tilapia goes well too, and cod or monkfish for the classier version...
2 tablespoons neutral oil
1 stalk lemongrass
3 tsp red curry paste
2 scallions
200 ml (6-7oz) coconut milk
3 baby bok choy
150 ml (5oz) vegetable stock

serve with: Basmati rice (cook according to package directions, add a piece of lemon grass while cooking)

1. Rinse fish, pat dry and cut into rough dices.
2. Remove the stems from the Pak Choi and divide into individual leaves. Cut the white of the scallions into fine pieces, and the green parts into wide strips about 1 inch. Remove outer hard part from the lemon grass. Cut about 1 inch into thin rounds, flatten the rest with a knife to allow the flavor to unfold. (one portion can cooked along with the riceof rice be cooked)
3. Heat 1 tablespoon oil in a pan over high heat and fry the fish, about 2 minutes. Remove from pan and place on a plate.
4. Heat ½ teaspoon oil in a wok over high heat, and sauté the pak choi leaves quickly. Add the vegetable stock and simmer for another 5 minutes until the liquid has evaporated.
5. In the pan, sear the red curry paste with the white scallions and lemon grass rounds. Add the green of the scallions and constantly stir. After about 3 minutes add the coconut milk. Add the other piece of lemon grass.
Turn down heat and let simmer. Add the fish back to the pan and let simmer for another 3 minutes.
6. Serve the fish curry and bok choy in deep bowls over rice. Enjoy!

Hier ist das Rezept schon mal in Deutsch (English to come soon):

Rotes Thai Curry mit Fisch, Baby Pak Choi, Fruehlingszwiebeln und Basmatireis

250g festes, weisses Fischfilet – ich nahm preissguenstigen Seelachs – Pangasius geht auch, und Kabeljau oder Seeteufel fuer die noblere Variante...
2 EL neutrales Oel
1 Stange Zitronengras
3 TL rote Currypaste
2 Fruehlingszwiebeln
200 ml Kokosmilch
3 Baby Pak Choi, in einzelne Blaetter geloest
150 ml Gemuesebruehe

dazu: Basmatireis (nach Packungsanweisung kochen, ein Stueck Zitronengras mitkochen)

1. Den Fisch abbrausen, trockentopfen und ein grobe Wuerfel schneiden.
2. Den Strunk vom Pak Choi loesen und in einzelne Blaetter zerteilen. Das Weisse von den Fruehlingszwiebeln ind feine Ringe, das Gruene in ca. 2-3 cm breite Streifen schneiden. Die auessere Huelle vom Zitronegras entfernen. 2 cm in sehr duenne Ringe schneiden, den Rest platt druecken, um das Aroma zu entfalten (davon kann ein Teil beim Reis mitgekocht werden)
3. 1 EL Oel in einer Pfanne erhizten und die Fischwuerfel rundherum scharf anbraten, ca. 2 Minuten. Aus der Pfanne nehmen und auf einen Teller legen.
4. ½ TL Oel im Wok hoch erhitzen und die Pak Choi Blaetter darin ansautieren. Mit Gemuesebruehe abloeschen, und weitere 5 Minuten kocheln lassen, bis die Fluessigkeit verdampft ist.
5. In der Pfanne die rote Currypaste mit den weissen Fruehlingszwiebeln und den Zitronengrasringen scharf anbraten. Das Gruene der Fruehlingszweibeln hinzugeben und weiterruehren. Nach ca. 3 Minuten mit der Kokosmilch abloeschen. Noch ein Stueck Zitronen gras hinzugeben. Hitze runterdrehen und bei kleinerer Flamme weiterkoecheln lassen. Die Fischwuerfel hinzugeben und weitere 3 Minuten koecheln lassen.
6. In tiefen Tellern auf dem Reis Pak Choi und Fisch-Curry servieren. Guten Appetit!
