{Delicious Sugar-Free Almond Meal Pancake Recipe}

- 2 1⁄2 cups almond meal
- 1⁄2 cup sprouted wheat flour
- 1⁄2 cup heavy whipping cream
- 8 eggs
- 1⁄2 cup butter, melted
- 12 drops liquid stevia
- 1 tablespoon pure vanilla extract
- 1 teaspoon baking soda
- Pinch of sea salt
- 1⁄4 cup water

Combine all ingredients and mix well. Heat, griddle and spray with nonstick cooking spray or grease with butter. Drop by 1/4 cupfuls and spread out slightly with back of spoon to flatten.

Cook until pancakes are golden and set, about 2 minutes on each side. Makes 16 Servings

Tips to try: I made a batch of pancakes every two weeks to save time in the mornings. When fried, spread single layer or pancakes on baking sheet and freeze for 1 hour.

Stack pancakes and store in gallon size bags in freezer. In the morning, pop a pancake in the microwave for 15 seconds, then toast in toaster.
