Need a sweet treat with your morning coffee? June Oven owner Chris Jones shares his recipe for Cinnamon Streusel Muffins made in his June. We approve this delicious way to start your morning!
INGREDIENTS
1 cup all-purpose flour
1/4 cup granulated sugar...
1 teaspoon baking powder
¼ teaspoon ground cinnamon
¼ teaspoon salt
½ cup milk
2 eggs, lightly beaten
3 tablespoons butter, melted
*********************************************
Optional:
add a teaspoon of applesauce to make it super moist
*******************************************
TOPPINGS
¼ cup all-purpose flour
2 tablespoons brown sugar
¾ teaspoon ground cinnamon
2 tablespoons butter, softened
*******************************************
STEPS
Preheat oven to 400ºF.
Pour mixture into measuring cup until cup is full.
Place muffin cups in muffin pan.
In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt.
In a small bowl, whisk milk, egg and melted butter until well blended.
Stir wet ingredients into dry ingredients, mixing only until moistened. Do not overmix. Divide batter into muffin cups.
For muffin topping, combine flour, sugar, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle evenly over muffins.
Bake 10 minutes.
Makes 6 muffins.
