So it's Friday was everyone's week?

In case you are thinking of doing some #baking this weekend I thought I would share my recent #bananacake I made, it's a little different to the others...but super yummy!

#Vitalityandmore Caramel Topped Banana Cake


4 Ripe organic bananas
2 flax eggs (2 tbs ground flaxseed to 6 tbs filtered water)
1/2 cup organic maple syrup Pureharvest​
3/4 tsp ground cinnamon
1/2 cup melted coconut oil
1 tsp vanilla
2 1/2 cups organic spelt flour Kialla Pure Foods​
3 tsp organic baking powder

To decorate
1/2 cup salted caramel Loving Earth​ melted
2-3 tbs caramelised buckinis Loving Earth

Simply mix dry ingredients and then add wet ingredients and bake on pre-heated oven on 180 degrees for 50 minutes or until the skewer is clean when you give it a little poak.

Okra Love...Are you a fan? I certainly am, did you know that #okra is packed with #nutrition and many health benefits?

It’s high in Vitamins B, C, folic acid and calcium. Low in calories and high in fiber, in fact it’s also know to reduce blood sugar levels apparently. Anyway I enjoy cooking it and eating it, it’s actually a very traditional Turkish & Mediterranean dish.

Hello long weekend...I know it's a little too hot to be baking today but nevertheless I'll share my Oat Besan Cookies with you...

I baked them a little while ago, again you would have seen them over on my Instagram page if you follow there. So here's my recipe if you are interested, the addition of besan - chickpea flour was great, added a nice crunch and texture to the cookies.

#Vitalityandmore Oat Besan Cookies


Recipe: {makes 12 cookies}

Baking time: 20-25 minutes

1 cup spelt organic flour or plain flour Kialla Pure Foods
1 cup organic oats Kialla Pure Foods
1/4 cup organic besan flour Kialla Pure Foods
3/4 cup organic dessicated coconut
1 cup coco sugar organic (powdered down)
1/2 cup melted coco oil
2 tbsp organic maple syrup Pureharvest
1/2 tsp baking powder
1 tbsp ground organic cinnamon
1/4 cup coco water Natural Raw C
1/4 cup melted #vegan chocolate to drizzle

Pre-heat your oven to 180 degrees and line 2 baking trays with paper. Place flour, oats, sugar and cinnamon into a bowl. Melt coco oil with maple syrup then add in baking powder/soda and stir well. Add in to dry ingredients and add coco water, mix well with spoon. Then roll ice-cream scoop of mixture into ball and flatten slightly on tray if you want big cookies like mine, if smaller use a tablespoon to measure out.

Bake for 20-25 min on 180 degrees. Allow them to cool or enjoy chewy and warm! Happy Baking my friends xo

I made this a couple of weeks ago and shared with my friends at our outdoor RnB concert - it was def enjoyed by all...perfect for summer, winter, autumn and spring...

- 800 grams of cooked white beans
- juice of 1 lemon
- good drizzle of EVOO plus extra for top
- 1/4 cup hulled tahini
- 1 tsp ground cumin spice
- 1 tsp salt
- 1/2 tsp cracked black pepper

Garnish with fresh chopped parsley, chili flakes and sumac spice...

Simply blend everything in your high speed blender - I used my Vitamix - garnish and enjoy with your favorite breads, veggie sticks or crackers! That’s it! Enjoy my friends

What's your go to #breakfast ? I know what you're thinking that this bowl looks a little like its autumn or winter perhaps, since it's still summer here but it's not it's a bowl of #spelt oats with cold #almondmilk with some poached apricots and raw crushed walnuts, maple syrup and loads of cinnamon. I saved these apricots in the fridge as sadly they are all out of season now.

On another note did you know that cinnamon contains loads of health benefits and has been used for c...enturies for its medicinal value? Just to name a few it's full of anti-oxidants, anti-inflammatory properties, can reduce the risk of heart disease, lower blood sugar levels and can even fight bacterial and fungal infections and diseases. Now the list goes on and on, so I say add cinnamon to EVERY breakfast bowl!!!

So I do enjoy oats and in the winter time cooked oats, but I find that spelt oats are so much lighter to eat and easier to digest? Who agrees? So what did you eat for breakfast today? Savory Paprika, Lime, Chili & Tahini glazed #corn makes a great side dish don't you think, especially now that they are in full season for us...

How do you like your corn on the cob 🌽

If you want to try my version here's what you need to do folks:


Take 2 corn on the cob, cut into 2
Steam until cooked
Then mix together in a bowl: 1 heaped tbsp tahini, 1 tbsp extra virgin olive oil, squeeze of lime juice. Have ready a pinch of salt, 1/2 tsp chili flakes, 1/2 tsp paprika, make sure you mix the tahini, olive oil and lime juice and rub onto the corn first, then add the seasoning.Grill for about 5-10 minutes and finish off with fresh finely chopped parsley! So much better that the classic butter and salt!

Whilst corn is a vegetable with high #sugar content it’s still a great anti-oxidant my reading tells me, it contains lutein and phytochemicals which promotes healthy vision and good health as all anti-oxidants do among other things of-course.

Strawberries are one of my favorite #summer fruits...

What’s yours? If I can’t buy them #organic then I will go without. I was reading an article recently about the number of toxins and pesticides - in other words poisons sprayed on conventionally grown strawberries in Australia and it’s was so alarming to me.

I honestly worry about the consumption of strawberries in society today and all the harmful toxins people are eating if organic is not an option for them, I just want bring about awareness of the food you are eating. I don’t judge I just know that I cured my auto immune disease by changing to a 100% organic diet among other things and will always be grateful and very passionate about sharing my organic lifestyle here...all you have to do is google conventional strawberries and toxins and you can see the results yourself, most of these toxins and pesticides, actually all of them are harmful to our health and can cause health concerns, but always do your own research guys, I'm no medical person or consultant just blogging and sharing.

If you’re unsure about this topic then keep the “Dirty Dozen” and “Clean fifteen” list handy with you when you do your grocery shopping and on that note Happy mid my friends with love and vitality to you all xx

So it's the weekend everyone, hope you're all having a good one so far...

Today I'm sharing a little treat I made a couple of weekends ago for a family BBQ and it was gone in a flash, even my niece who's not a fan of banana loved it, it always makes me happy to see everyone enjoying what I make.

If you're keen to re-create it then here's the recipe for my all organic "Vanilla Banana Chocolate Cheesecake Slice" - make sure you have pre-soaked your cashews overnight and it's al...ways best if you can make the mixture very early in the morning to enjoy later in the day or like what I always prefer make it the night before and let it set in the freezer.


For the Base:
1 cup raw almonds
4 dates
1/2 cup cacao nibs
1/2 cup coconut flour
1/8 cup coconut water

For the Filling:
2 frozen bananas
1 cup coconut milk
1 cup cashews soaked overnight
1/2 cup coconut oil (melted)
2 tsp vanilla
1/3 cup maple syrup
1 cup pitted dates (soaked to soften a little)

To decorate:
Melt over hot water
1/4 cup vegan chocolate melts
1 tbsp coconut oil
6 tbsp caramelised buckinis (approx) Loving Earth

1. Prepare the base first by placing all items in a high speed blender until it becomes paste like. Place in a lined tin and put in freezer to set for about 5-10 minutes.

2. Place all items for the filling in your high speed blender I use my Vitamix and ensure everything blends together well. Remove your tin from the freezer and pour over as the base should be a a little firm now.

3. Keep the slice in the freezer over night or at least for 6 hours to ensure it's set.

4. Remove and splash with some melted vegan or whatever chocolate you like and top with caramelised buckinis for extra taste and crunch on top.

5. Slice up and enjoy this yummy treat.

Note: if not all finished keep in a container in the freezer and best eaten within 5 days.
